A refreshing cake used at the 2023 Taste of Chittering event

INGREDIENTS

2 cups Self Raising flour

1 ¼ cups Caster sugar

2 large eggs

¾ cup olive oil

2 tablespoons lemon zest

¼ cup lemon juice

1 cup Greek yoghurt

 

Preheat oven to 170 degrees C.

In an electric mixing bowl, add sugar, oil, eggs, lemon zest and lemon juice.   Whisk a couple of minutes until pale and light.

Gently fold in yoghurt and the sifted flour.  Pour in a cake tin of your choice, ensuring it is well-oiled or has been lined with Glad Bake paper so it does not stick to the tin.

Bake at 170 degrees for 45-50 minutes, ensuring the cake springs back up when touched.

 

When the cake is cool, sift icing sugar over the cake for a final finish.

OR

ICING

1 ½ cups Icing sugar

2 tablespoons lemon juice and some hot water to make a smooth glaze!

Spread icing over the cake when it has cooled.  Enjoy!
